Steamed Mutton

Ingredients:
  • 5 lbs mutton cut into small pieces
  • 1 large onion diced
  • 1 green pepper diced
  • 4-5 cloves garlic coursely diced
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/4 cup lime juice (2-3 limes) or Old Sour if zest is desired
  • 1 Teaspoon Thyme
  • Salt and Pepper to taste
  • 2 tablespoons of cooking oil
  • 6 ounce can of tomato paste
Directions:
  • Wash the mutton and leave to soak in lime juice for 30 minuteis and then wash again.
  • Put in pot of water and boil for an hour then drain.
  • Fry onion, green pepper, garlic, thyme until browned.
  • Add paste, mutton and cover with water, salt and peper and let boil until meat is tender.

Junkanoo Chicken and Rice

Ingredients:
  • 1/2 cup sliced fresh mushrooms
  • 1 piece of celery, diced
  • 2 tablespoons vegetable oil
  • 1 onion sliced
  • 1 1/4 cups chicken broth
  • 1/2 teaspoon soya sauce
  • 1 yellow or red sweet pepper cut into strips
  • 2 zucchinis sliced
  • 2 tablespoons cornstarch
  • 1/2 teaspoons ginger (ground)
  • 2 cups chicken brest ( cooked and cubed)
  • 2 packages Mahatma yellow rice
Directions:
  • Cook rice as directed, but substitute water with tomato juice, and add celery and peppers.
  • In a large skillet, heat oil and saute onions, zucchinis and mushrooms.
  • In a seperate bowl, whisk together chicken broth, soya sauce, ginger and cornstarch, then add to other ingredients in skillet.
  • Cook over low heat until it comes to a boil and thickens, and still frequently.
  • Add chicken and gently still until hot.
  • Serve this on a bed of rice.

Chicken Souse

Serves: 8

Ingredients:
  • 5 lbs portion chicken wings
  • 1 onion
  • 8 lemon/Lime "big sour" (your desired amount)
  • 1/4 lemon Juice
  • pepper (your desired amt)
  • all-spice (your desired amt)
  • 1/2 tspn salt (your desired amt)
  • 1 carrot
  • 1 stick of celery
  • 2 Irish potatoes (if desired)
Directions:
  1. Clean portion wings in vinegar and warm water.
  2. Place wings into pot containing and 8-10 cups of water. (this will ensure that all remaining oils and other particles are removed) let wings boil for about 5-8 minutes.
  3. Remove from pot and place into a bowl containing cool water, rinse well with water and lemon juice. Place wings into pot with about 8-10 cups of water or until wings are completely covered.
  4. Slice onions, pepper, celery, carrots, and potatoes. Add salt, onions, celery, lime , pepper, lemon juice and all-spice seeds. (Boil for about 45 minutes). Add potatoes and Carrots.
  5. Boil for another 15-20 minutes. Serve with home made bread or Jonney Cake if desired.

Mahi Mahi

Ingredients:
  • 1 lb carrots grated
  • 2 pounds Mahi Mahi fillets
  • 1/4 cup rum
  • 1/2 cup fresh lime juice
  • 2 onion, sliced into thin rings
  • 1 lemon, sliced
  • 2 teaspoons dried oregano
  • 4 tablespoons butter
  • 1 tablespoon old bay seasoning
  • black and hot pepper to taste
Directions:
  • Place the fish fillets in an oven proof baking dish.
  • Season fish with rum, lime juice, onions, and spices.
  • Cover and refrigerate overnight.
  • Preheat oven to 325 degrees F.
  • Bake, covered, at 350 degrees F for about 20 to 30 minutes or until fish flakes easily with a fork.

Bahamian Crab Soup

Ingredients:
  • 6 white land crabs, washed
  • 1/4 pound salt pork or 2 tsp. bacon fat or oil
  • 1 large sliced onion
  • 3 Tbsp. tomato paste
  • 1 Tbsp. flour
  • Salt & Pepper to taste
  • 1/4 tsp. thyme
  • 3 Tbsp. rice, uncooked
  • Vegetables as desired
Method:
  • Remove back (top) shell from body of crab.
  • Remove fat from back shell, being careful not to break the bitter gall.
  • Discard gall and back shells.
  • Remove fat from body shell, if any.
  • Save fat & body shells and set aside.
  • In coup pot fry out salt pork or heat bacon fat or oil; add onion, tomato paste, flour & seasonings.
  • Cook, stirring constantly, until onions are golden brown.
  • Crack body shells and add with claws and crab fat to cooking pot; cook and stir 1 minute.
  • Add 2 quarts boiling water and rice; simmer 2 hours.
  • Vegetables such as potatoes, carrots and whatever you have may be added.
  • Serve hot.

Curried Lobster

Serves 4 - 6.

Ingredients:
  • Lobster meat
  • 4 Tbsp. curry powder
  • 1 large, ripe tomato, chopped
  • Pepper to taste
  • 6 Tbsp. butter
  • 1 large onion, sliced
  • Salt to taste
  • 1 c. meat stock or water
Method:
  • Pour cooking oil into frying pan.
  • Add onion & sauté until soft.
  • Add curry powder & cook about 5 min.
  • Add tomato & continue cooking for a few minutes.
  • Add lobster, seasonings & stock or water.
  • Simmer for 30 min.
  • Serve with boiled rice or cooked noodles.

Smudder Fish

Ingredients:
  • Fish, cleaned & scaled
  • Salt to taste
  • hot pepper to taste
  • limes
  • 1 onion, sliced
  • 2 ripe tomatoes
  • 1 Tbsp. Thyme
Method:
  • Scorch the fish on both sides.
  • Grind pepper & salt together & rub on fish.
  • Squeeze lime juice over & set aside for about 2 hours.
  • Remove fish from lime juice.
  • Place fish on smoking hot oil in frying pan & fry on both sides until brown.
  • Set aside in a dish.-pour off all fat except 2 T.
  • Add onion & sauté until wilted.
  • Pour in tomato, cook for about 3 min.
  • Add thyme & 1 pint of water & allow to boil for about 5 min.
  • Season to taste.
  • Add fried fish & continue to boil for 10 min.

Boiled Fish

Serves: 4.

Ingredients:
  • 2 lbs. grouper or any fish preferred
  • salt & pepper to taste
  • 2 T. butter or margarine
  • 2 T. hot sauce
  • Juice of 2 lemons, limes or sour oranges
  • 2 onions, sliced
  • 4 potatoes sliced
Method:

  • Place cleaned & washed fish in cooking pot & ¾ cover with water.
  • Add potatoes, salt, pepper, butter or margarine, hot sauce & lemon juice.
  • Place onions on top of fish & cook over medium heat until fish is tender.
  • Do not cook fish too long for it may fall apart.

Bahamian Ham Loaf

Ingredients:
  • 3 c. ham, cooked & minced
  • 1 c. bread crumbs
  • 2 eggs, beaten
  • 3/4 c. milk
  • 1/2 tsp. salt
  • 1 Tbsp. parsley flakes
  • T Tbsp. prepared mustard
  • 1 Tbsp. Worcestershire sauce
Method:
  • Mix all ingredients until well-blended and put into loaf pan or baking dish.
  • Cover with topping (below) and bake in preheated 300° oven for one hour.
  • Let stand in pan for 5-10 minutes.
  • Place on serving platter and cut into slices to serve.
Topping:
  • 1/3 c. brown sugar
  • 1/2 Tbsp. dried mustard
  • 1/2 c. pineapple, crushed and drained
Stir lightly with a fork until blended and spread over ham mixture.
