Ferghana Pilaff

Ingredients:
  • 1 kg (2 1/4 lb. ) rice
  • 500 g mutton or beef
  • 1 kg (36 oz.) carrots
  • 4 onions
  • 350 g vegetable oil
  • salt
  • cumin seeds
  • cayenne pepper to taste
Directions:
  • Heat oil until white smoke appears.
  • Add sliced onions and sear in oil until reddish-brown.
  • Cut meat in pieces and saute with onions.
  • After a few minutes put in carrot strips and cook until golden.
  • Add water, salt, and spices and stew for 20-25 min.
  • Add rice and more water.
  • Just 1-1.5 cm above surface of rice.
  • Cook uncovered until water evaporates.
  • Cover and cook on low heat 20-25 min. or until done.

Mash Kovok (Mung Bean And Pumpkin Soup)

Serves 1.


Ingredients:
  • 1 Small Onion -- Chopped
  • 1 Tablespoon Butter
  • 7 Cups Chicken Broth
  • 1 Cup Mung Beans
  • 1 Cup White Beans -- Cooked
  • 2 Medium Potatoes -- Chopped
  • 1 Small Butternut Squash -- Chopped
  • Salt And Pepper -- To Taste
  • 1 Tablespoon Parsley -- Chopped
  • 1 Tablespoon Basil -- Chopped
  • Sour Cream
Directions:
  • Saute onion in butter until golden.
  • Add broth and mung beans, bring to a boil.
  • Simmer for 30 minutes.
  • Add potatoes and squash.
  • Simmer for 20 minutes.
  • Add white beans, salt and pepper.
  • Simmer for 5 minutes.
  • Add parsley and basil.
  • Remove from heat and serve with a dollop of sour cream.

Karam Shurva (Cabbage Soup)

Ingredients:
  • 250 g (9 oz.) mutton or beef
  • 40 g or 3 tablespoons vegetable oil
  • 200 g (7 oz.) cabbage
  • 50 g (2 oz.) onions
  • 50 g (2 oz.) carrots
  • 300 g (6 oz.) tomatoes
  • 200 g (7 oz.) potatos
Directions:
  • Cut meat into 20-30 g (1 oz) pieces and fry it in pan in vegetable oil until browned.
  • Add sliced onions, large equal-sized pieces of carrots, and continue to saute.
  • Then add shredded cabbage and quartered tomatoes.
  • Pour in water and bring to a boil. Add quartered potatoes and cook on medium heat until done.
  • In the final 5-10 minutes of preparation, remember to add salt and spices to taste.
  • Serve soup garnished with fresh chopped greens.

Soup With Stuffed Bell Peppers

Ingredients:
  • 2 onions
  • 2-3 potatoes
  • 2 carrots
  • 3 tomatoes
  • salt and spices to taste
  • 12 bell peppers.
Filling:
  • 500 g (18 oz.) mutton or beef
  • 1/2 cup rice
  • 1 egg
  • 1 onion
  • 1/2 bunch (1/ 2 oz.) parsley
  • salt and black pepper to taste
Directions:
  • Separate meat from bones.
  • The bones go into a soup kettle to start the broth and the meat through a meat-grinder for filling.
  • Combine minced meat with pre-soaked rice, beaten egg, finely chopped onions, parsley, salt and black pepper.
  • To make stuffed peppers, remove stems and seeds from bell peppers and fill with meat mixture.
  • Cut carrots into large pieces, dice onions, quarter tomatoes and add to kettle with broth.
  • Boil vegetables 15-20 minutes, add stuffed bell peppers and pared and quartered potatoes and cook on low heat 30-40 minutes.
  • In the final 5-10 minutes add salt and spices.

Kiukat Palov (Heab Plov)

Serves 4.

Ingredients:
  • 2 Tablespoons Olive Oil
  • 1 Medium Onion -- Chopped
  • 1/2 Pound Ground Beef And Lamb
  • Salt And Pepper -- To Taste
  • 1 Pinch Saffron
  • 1 Cup Parsley -- Chopped
  • 1 Cup Cilantro -- Chopped
  • 1/2 Cup Mint -- Chopped
  • 1/2 Cup Dill -- Chopped
  • 1 1/2 Cups Rice
Directions:
  • Saute onion in oil until golden.
  • Add meat, salt, pepper and saffron.
  • Simmer for 10 minutes.
  • Add 2 cups of water, bring to a boil.
  • Add parsley, cilantro, mint and dill.
  • Cover and simmer for 15 minutes.
  • Add rice and cover by 1-inch of water.
  • Cover and bring to a boil.
  • Lower heat and simmer for 20 minutes.
  • Remove from heat, stir well and let stand for 5 minutes.
  • Serve.

Lovia Oshi (Lamb And Bean Soup)

Serves 4.

Ingredients:
  • 3 Tablespoons Olive Oil
  • 1 Medium Onion -- Chopped
  • 1 Pound Lamb -- Cubed
  • 1 Medium Carrot -- Chopped
  • 1 Can Tomatoes -- Chopped
  • 1 Can Tomato Paste
  • 7 Cups Beef Broth
  • 2 Cups White Beans -- Cooked
  • Salt And Pepper -- To Taste
  • 1 Tablespoon Parsley -- Chopped
Directions:
  • Saute onion in oil until browned.
  • Add lamb and stir well.
  • Saute for 10 minutes.
  • Add carrot, tomatoes and tomato paste.
  • Saute for 1 minute. Add broth and bring to a boil.
  • Cover and simmer for 45 minutes.
  • Add beans, salt and pepper.
  • Simmer for 10 minutes.
  • Sprinkle with parsley and serve.

Zharkop (Lamb And Vegtables)

Ingredients:
  • 3 Tablespoons Olive Oil
  • 2 Pounds Lamb -- Cubed
  • 2 Medium Onion -- Chopped
  • 3 Medium Carrot -- Chopped
  • 1 Medium Bell Pepper -- Chopped
  • 1 Can Tomato Paste
  • Salt And Pepper -- To Taste
  • 1 Pinch Cayenne
  • 1 Teaspoon Cumin
  • 1/2 Teaspoon Coriander
  • 1 Cup Beef Broth
  • 4 Large Potatoes -- Chopped
  • 2 Cloves Garlic -- Chopped
  • 1/2 Cup Cilantro -- Chopped
  • 1/2 Cup Parsley -- Chopped
  • Pita Bread
Directions:
  • Saute lamb in oil for 10 minutes.
  • Add onions, carrots and pepper.
  • Saute for 10 minutes.
  • Add tomato paste, salt, pepper, cayenne, cumin, coriander, and broth.
  • Lower heat and simmer for 1 hour.
  • Add potatoes and garlic and simmer for 15 minutes.
  • Add cilantro and parsley, simmer for 2 minutes.
  • Serve with pita bread.

Azhabsanda (Steamed Beef Stew)

Ingredients:
  • 1 Teaspoon Olive Oil
  • 3 Medium Potatoes -- Chopped
  • Salt And Pepper -- To Taste
  • 5 Large Roma Tomato -- Sliced
  • 3 Medium Carrot -- Chopped
  • 1 Large Onion -- Chopped
  • 2 Pounds Beef -- Cubed
  • 2 Medium Italian Peppers -- Chopped
  • 1/2 Cup Dill -- Chopped
  • 1/2 Cup Parsley -- Chopped
  • 8 Cups Beef Broth
Directions:

Combine all ingredients, stir well and simmer, covered for 1 1/2 hours.
