Ingredients:
- 1 Small Onion -- Chopped
- 1 Tablespoon Butter
- 7 Cups Chicken Broth
- 1 Cup Mung Beans
- 1 Cup White Beans -- Cooked
- 2 Medium Potatoes -- Chopped
- 1 Small Butternut Squash -- Chopped
- Salt And Pepper -- To Taste
- 1 Tablespoon Parsley -- Chopped
- 1 Tablespoon Basil -- Chopped
- Sour Cream
- Saute onion in butter until golden.
- Add broth and mung beans, bring to a boil.
- Simmer for 30 minutes.
- Add potatoes and squash.
- Simmer for 20 minutes.
- Add white beans, salt and pepper.
- Simmer for 5 minutes.
- Add parsley and basil.
- Remove from heat and serve with a dollop of sour cream.
