Psarosoupa (Fish Soup)

Psarosoupa is another traditional Greek soup, since Greece is surrounded by water where the fish is fresh in the market every day. For this recipe you can add any other sea food you prefer.

Ingredients:

1 ½ kilo of fresh sea fish
1 cup of shopped carrots
1 cup of finely chopped onions
1 cup of diced potatoes
½ a cup of ripped diced tomatoes
¼ cup of fresh lemon juice
½ a cup of rice
Salt and pepper to taste


Method:

-Place the fish (and the rest of the sea food of your choice) in a pan with about 3 liters of water and cook well. When the fish is cooked, strain the juice into another pan and add all the vegetables (excluding the parsley) to cook as well. In the meantime debone the fish and the rest of the sea food and put back in the pan with the vegetables.

-5-10 minutes later or after the vegetables are cooked remove from the heat, place in soup bowls add parsley in each plate as garnishment and serve.
