Avgolemono (Rice-Egg & Lemon Juice Soup)

Avgolemono is a very known, popular and loved soup among the Greek population wherever they happen to live. It can be eaten as a meal starter or as a main dish.


Ingredients:

8 cups of chicken broth
1 cup of rice
½ a cup of lemon juice
6 eggs (separate yolks from white)
Salt and pepper to taste

Method:

-For the chicken broth you can use the ready bought one from the store or you can make it your self by boiling some chicken or parts of it and serve it with the soup. The home made broth is always more nutritious and the soup tastes better.

-Place the chicken broth in a pan and cook the rice. Remove the pan from the heat; beat the egg yolks with the lemon juice and with a deep serving soup spoon gradually add broth into it without stopping beating the mixture.

-After adding 2-3 spoonfuls of broth into your mixture pour it back into the rest of the broth. When pouring it back into the broth you keep stirring the broth this time so it can be mixed well.
