Scalloped Breadfruit

  • Breadfruit
  • Bacon (optional)
  • Cheese sauce
  • Peel breadfruit but leave core.
  • Wedge and boil in salted water till just cooked.
  • Pour off water and cover.
  • Make thick cheese sauce with grated onion.
  • Grease fireproof dish.
  • Cut bacon into half inch sections.
  • Cut out breadfruit core and slice breadfruit thinly.
  • Layer breadfruit, bacon and cheese sauce till all used.
  • Top with grated cheese and a few butter knobs.
  • Bake till browned at 350 degrees for 30 minutes.
