Zambian Groundnut Soup

In Zambia, if a soup bone is available, it is added to the pot to flavor Groundnut Soup.

Serves 6.


1 large tomato, peeled and cut in eights
1 large Onion, cut in eights
1 large Potato, peeled and cut into eights
2 tablespoons rice
soup bones, if available
salt to taste
2 ¼ cups water
1 cup finely ground unsalted peanuts


Combine first six ingredients with 2 cups water.

Simmer until vegetables are soft.

Mix ground peanuts with ¼ cup water and add to pot.

Simmer 30 minutes more.
