Mango Chutney


12 cups firm and ripe diced mangos
½ tablespoon chopped fresh ginger
1 large onion
1 tablespoons diced chili peppers
1 cup diced almonds
1 tablespoon salt
¼ cup lime juice
1½ cups raisins
4 cups sugar
4 cups white vinegar

  1. Combine vinegar and sugar in heavy bottomed, large kettle or pot.
  2. Boil 5 minutes
  3. Add all the other ingredients and return to a boil
  4. Let simmer about 2 hours with frequent stirring. Contents should thicken in this time.
  5. Store as you wish. This is good for preserving in sterile jars if you posess the knowledge only!.
